Green lentils are actually a grayish-green color, and they tend to be whole rather than split. Since they have skin, they take a longer time to cook and maintain a firm texture. The green variety has a much more peppery flavor.
Cooking directions:
Basic Green Lentils
2 cups Arrowhead Mills® Green Lentils
4 cups cold water
Rinse and sort lentils. Place lentils with water in a large sauce pan. Bring to boil, reduce heat and simmer for 30 to 45 minutes, or until done.
Yields 3 cups.
Tips and Tricks: Green Lentils are nutritious as well as delicious. When combined with rice you get a complete protein. Enjoy them with brown rice in a casserole or season with garlic and onions for a tasty side dish. Great for soups and mashing into patties!
