Tempeh is a fermented soybean product originating from Java, Indonesia. It is primarily made from soybeans through fermentation, where mycelium binds the soybeans together, forming a solid block. Tempeh is rich in protein, vitamin B12, and dietary fiber. The fermentation process makes its nutrients more easily absorbed by the body, making it a good source of protein for vegetarians.
Most commercially available tempeh requires refrigeration or freezing. Fresh tempeh can only be stored for 2-3 days, and refrigerated tempeh for only a few months. Sometimes, due to weather or transportation, tempeh can quickly over-ferment or spoil. Also, it's usually sold in large blocks, requiring cooking all at once, which is inconvenient!
